Sometimes the best recipes come from using up ingredients you already have! I had some leftover crispy bacon after making my warm bacon vinaigrette, so I decided to put it to good use with a batch of roasted Brussels sprouts.
The combination of buttery Brussels sprouts, crispy bacon, and garlic turned out delicious. During testing, I discovered that tossing the sprouts with a little extra butter after roasting made all the difference. It gave them just the right amount of richness without making them greasy.

Method
- Preheat oven to 425°F. Trim the dry stem ends and remove damaged outer leaves from the Brussels sprouts. Halve medium sprouts lengthwise through the core and quarter very large sprouts. Rinse and dry thoroughly.
- Toss the Brussels sprouts with 2 tablespoons melted butter and black pepper. Arrange cut-side down in a single layer on a baking sheet.
- Roast for approximately 15 minutes, checking for browning and tenderness. Cooking time will vary depending on the baking sheet and size of the sprouts.
- Sprinkle the minced garlic over the Brussels sprouts near the end of roasting. Continue cooking briefly until fragrant, taking care not to scorch the garlic.
- Remove from the oven and immediately toss with the crispy cooked bacon and remaining 1 tablespoon butter.
- Taste before adding table salt. Serve warm.

Dry the sprouts thoroughly. After rinsing, pat them dry before roasting. Excess moisture can cause them to steam instead of developing those delicious browned edges.
Arrange them cut-side down. Give the sprouts enough room on the baking sheet so they roast evenly and develop a nicely browned surface.
Add the bacon at the end. Since the bacon is already cooked and crispy, there’s no need to roast it again. Tossing it with the hot Brussels sprouts after removing them from the oven helps keep it from drying out.
