Garlic Parmesan Keto Mashed Cauliflower

This keto mashed cauliflower is rich, creamy, and loaded with garlic and Parmesan flavor. It’s a delicious low-carb alternative to traditional mashed potatoes, with a smooth, velvety texture that makes it perfect for serving alongside your favorite main dishes.

I use frozen cauliflower rice to keep things simple, then blend it with cream cheese and plenty of Parmesan. The result is a creamy, flavorful side dish that’s especially good with saucy recipes like chicken piccata.

Ingredients

  • 24 ounces frozen cauliflower rice approximately 2 bags
  • 2 tablespoons unsalted butter
  • 1½ teaspoons minced garlic
  • 2 ounces cream cheese softened
  • 4 ounces grated Parmesan cheese
  • 2 teaspoons heavy cream
  • ¼ teaspoon table salt
  • ⅛ teaspoon black pepper

Equipment

  • Microwave
  • Skillet
  • Colander
  • Food processor

Method

  1. Microwave the cauliflower. Cook the frozen cauliflower rice according to the package directions until tender.
  2. Sauté the garlic. Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant without browning.
  3. Reduce the moisture. Add the cooked cauliflower rice to the skillet with the garlic butter. Stir and cook for approximately 2 minutes to evaporate excess moisture.
  4. Blend until smooth. Transfer the cauliflower mixture to a food processor or suitable blending vessel. Add the softened cream cheese, grated Parmesan, and heavy cream. Blend until smooth and creamy.
  5. Season. Add the table salt and black pepper. Blend briefly to incorporate.
  6. Serve warm. The mashed cauliflower will thicken slightly as it rests.

Frequently Asked Questions

Can I use fresh cauliflower instead of frozen cauliflower rice?

Yes, fresh cauliflower should work. Cut the cauliflower into small florets and cook until tender before proceeding with the recipe. Be sure to remove as much excess moisture as possible, since fresh cauliflower may produce a slightly different texture.
