Crispy bacon, golden-brown radishes, and tender onions make this an easy, savory low-carb side dish. The radishes mellow as they cook, while a little smoked paprika adds warmth without overpowering the bacon.

4ozdiced onion
¼cupwater
½tspgarlic powder
¼tspsmoked paprika
Salt and black pepper to taste
1tbspbutteroptional, only if needed
Instructions
Cook the bacon in a large skillet until crisp. Remove the bacon, leaving the drippings in the skillet. You'll need: 4 slices thick-cut bacon.
Add the radishes, onion and water to the skillet with the reserved bacon drippings. Cover and cook approximately 5 minutes. You'll need: 1 pound diced radishes, 4 oz diced onion, ¼ cup water.
Uncover and add the garlic powder, smoked paprika, salt and pepper. Cook uncovered for approximately 8–10 minutes, allowing the water to evaporate and the radishes to brown before stirring. If the skillet becomes too dry, add up to 1 tbsp butter as needed. The radishes should be browned and tender with a little firmness remaining. You'll need: ½ tsp garlic powder, ¼ tsp smoked paprika, salt and black pepper to taste; up to 1 tbsp butter, optional, if needed.
Crumble the cooked bacon and return it to the skillet. Serve warm.
Notes
A fried egg with a runny yolk makes a great optional pairing. Cooking time may vary depending on skillet size; use browning and tenderness as your guide.
