Golden Keto Radish Hash with Crispy Bacon

Missing traditional breakfast potatoes on keto? Radishes make a surprisingly good substitute. As they cook, their sharp, peppery bite mellows, leaving a tender center and golden-brown edges.

This skillet hash is a simple way to enjoy that familiar breakfast-potato experience without the potatoes. Serve it alongside eggs for breakfast or as a side dish with dinner.

Ingredients

  • 1 pound red radishes diced into approximately ⅜-inch pieces
  • 4 slices thick-cut bacon
  • 4 oz diced onion
  • ¼ cup water
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp butter optional, only if needed

Equipment

  • Skillet

Method

  1. Cook the bacon in a large skillet until crisp. Remove the bacon, leaving the drippings in the skillet.
    You'll need: 4 slices thick-cut bacon.
  2. Add the radishes, onion and water to the skillet with the reserved bacon drippings. Cover and cook approximately 5 minutes.
You'll need: 1 pound diced radishes, 4 oz diced onion, ¼ cup water.
  3. Uncover and add the garlic powder, smoked paprika, salt and pepper. Cook uncovered for approximately 8–10 minutes, allowing the water to evaporate and the radishes to brown before stirring. If the skillet becomes too dry, add up to 1 tbsp butter as needed. The radishes should be browned and tender with a little firmness remaining.
You'll need: ½ tsp garlic powder, ¼ tsp smoked paprika, salt and black pepper to taste; up to 1 tbsp butter, optional, if needed.
  4. Crumble the cooked bacon and return it to the skillet. Serve warm.

Frequently Asked Questions

Do radishes really taste like potatoes when cooked?

Not exactly, but they’re a surprisingly good low-carb substitute. Cooking mellows their peppery bite, giving them a tender texture that works especially well in skillet hashes.

Do I need to peel the radishes?

No. Just wash them, trim the ends, and dice them. The skins are perfectly edible and don’t need to be removed.

Can I make this radish hash ahead of time?

Yes. You can prepare it ahead and refrigerate it in a covered container. Reheat in a skillet to help restore some of the browned edges. The bacon may lose some crispness during storage.
