Method
- Preheat the oven to 375°F. Lightly grease an 8 × 8-inch baking dish.
- Prepare the vegetables. Chop the fresh spinach. Drain, rinse, pat dry, and chop the artichoke hearts.
- Mix the creamy base. You'll need: 12 oz cream cheese, ¾ cup mayonnaise, ½ tsp table salt, 1 tsp garlic powder, and 1 tsp onion powder. Stir the cream cheese and mayonnaise together in a large mixing bowl until smooth. Add the seasonings and mix until evenly combined.
- Add the remaining ingredients. Fold everything into the creamy base until evenly distributed. If the mixture is too thick to combine easily, add 1 tbsp heavy cream at a time, up to 2 tbsp.
- Transfer to the baking dish. Spread the mixture evenly in the prepared dish, smoothing the top.
- Bake for 20 minutes. Check that the dip is hot and bubbling around the edges, the cheese is fully melted, and the spinach has wilted. If needed, continue baking in 5-minute increments until heated through.
- Rest for 5 minutes before serving. Serve warm with your favorite low-carb dippers.
