Ingredients

Hand Rolls
Spicy Mayo (optional)
Hand Rolls
  • 2 full-size nori sheets cut in half
  • 4 oz cold-smoked salmon lox-style
  • 3 oz cream cheese slightly softened
  • 4 oz English cucumber cut into thin matchsticks
  • 3 oz avocado flesh approximately ½ medium avocado, thinly sliced
  • Soy sauce or coconut aminos optional for serving
Spicy Mayo (optional)
  • 3 tbsp mayonnaise
  • ¾ tsp sriracha or to taste
  • ½ tsp lime juice

Method

  1. Cut each nori sheet in half crosswise to make four rectangles. Place one half-sheet shiny side down, with the long edge horizontal.
  2. Spread approximately ¾ oz cream cheese diagonally on the left half of the nori. Layer 1 oz cold-smoked salmon, cucumber matchsticks, and avocado slices separately, pointing toward the upper-left edge.
  3. Fold the bottom-left corner snugly over the filling and roll diagonally into a cone, gently tucking any escaping ingredients inward as you roll. Avoid leaving the first fold loose. Seal the outer corner with a tiny dab of water or cream cheese.
  4. Repeat with the remaining nori and fillings to make four hand rolls. Serve immediately with optional spicy mayo drizzled over the exposed filling or served on the side.
Spicy Mayo
  1. In a small bowl, stir together the mayonnaise, sriracha, and lime juice until smooth. Keep chilled until ready to serve. Divide between the two dinner servings and drizzle over the hand rolls or serve on the side.

Notes

Recipe Tips

  • Pat the cucumber dry before assembling to help prevent soggy nori.
  • Roll snugly without overfilling. A firm first fold helps keep the filling in place.
  • Assemble just before serving. Nori stays crisp when eaten promptly but becomes chewy as it sits.
  • Check the sriracha label for added sugar.
  • Keep cold-smoked salmon refrigerated until ready to use. Cold-smoked salmon is not fully cooked; people at higher risk of foodborne illness should use fully cooked salmon instead.
  • Soy sauce or coconut aminos are optional and excluded from the nutrition estimates.

Not Quite a Sushi-Rolling Pro?

My first few attempts at rolling these cones were a little… ambitious. The filling kept escaping, and my cones weren’t exactly holding together. Turns out, a snug first fold and tucking everything in as you roll makes a big difference!

But if your nori refuses to cooperate, skip the rolling altogether. Cut it into smaller pieces, pile on your fillings, and enjoy them as little sushi tacos. Same delicious flavors, considerably less wrestling with seaweed.
