Prosciutto-Wrapped Asparagus with Dubliner Cheese Crust

Prosciutto-wrapped asparagus gets roasted until tender-crisp and finished with a golden layer of Dubliner cheese. A little fresh lemon adds a bright finishing touch, making this an easy low-carb side dish that feels a little special.

What Is Dubliner Cheese?

Dubliner is an Irish cheese made by Kerrygold. It has a firm texture and a rich, nutty flavor with a hint of sweetness, somewhat like a cross between aged cheddar and Parmesan.

In this recipe, finely grated Dubliner melts over the prosciutto-wrapped asparagus, creating a savory, golden cheese crust.

Can’t find Dubliner? Try one of these alternatives:

Aged white cheddar: A good everyday substitute with a sharper, tangier flavor.

Gruyère: A nutty, slightly sweeter option that melts beautifully.

Parmesan: A firmer, saltier alternative that can create a crisp topping, although it won’t melt quite like Dubliner.

These substitutions haven’t been tested in this recipe, so the flavor, browning, and texture may differ from the original.

Ingredients

  • 1 pound fresh asparagus woody ends trimmed
  • 8 thin slices prosciutto approximately 4 oz, depending on slice size
  • 2 oz Kerrygold Dubliner cheese finely grated
  • 2 tsp olive oil
  • Freshly ground black pepper to taste
  • 1 tsp fresh lemon juice optional, to finish

Equipment

  • Baking sheet
  • Cheese grater
  • Parchment paper

Method

  1. Preheat the oven. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Wrap the asparagus. Divide trimmed asparagus into 8 small, roughly equal bundles. Wrap the middle of each bundle with 1 thin prosciutto slice, leaving the tips and ends exposed.
  3. Oil and season. Brush exposed asparagus lightly with olive oil and season with black pepper. Do not add salt initially; prosciutto and Dubliner are salty.
  4. Roast the bundles. Roast approximately 12 minutes until asparagus is tender-crisp and prosciutto starts to crisp. Check earlier if the spears are thin.
  5. Add the cheese. Sprinkle grated Dubliner over exposed asparagus and some prosciutto. Roast another approximately 2 minutes until the cheese melts and edges turn golden.
  6. Finish and serve. Finish with the optional lemon juice if desired. Serve 2 bundles per person.
