What Is Dubliner Cheese?

Dubliner is an Irish cow’s milk cheese made by Kerrygold. It has a firm texture and a distinctive flavor that combines the sharpness of aged cheddar with slightly sweet, nutty notes reminiscent of Parmesan.

Although it’s delicious on its own, Dubliner also works well in cooked dishes. When finely grated and gently heated, it melts into a rich, flavorful cheese sauce.

You can usually find Kerrygold Dubliner in the specialty cheese section of larger grocery stores.

Ingredients

  • 1 pound fresh Brussels sprouts trimmed and halved
  • 2 tbsp olive oil
  • ½ tsp table salt
  • ¼ tsp black pepper
  • ½ cup heavy whipping cream
  • 4 oz Kerrygold Dubliner cheese finely grated, divided (3 oz for sauce, 1 oz for topping)
  • 2 tsp Dijon mustard
  • 2 tsp minced garlic

Equipment

  • Baking dish

Method

  1. Roast the Brussels Sprouts. You'll need: 1 pound fresh Brussels sprouts, 2 tbsp olive oil, ½ tsp table salt, and ¼ tsp black pepper.
Preheat the oven to 425°F. Toss the trimmed and halved Brussels sprouts with the olive oil, salt, and pepper. Arrange cut-side down on a baking sheet. Roast for approximately 15 minutes, then check for doneness. The sprouts should be browned and tender with a slight bite. Continue roasting briefly if needed.
  2. Prepare the Cheese Sauce. You'll need: ½ cup heavy whipping cream, 2 tsp minced garlic, 2 tsp Dijon mustard, and 3 oz grated Dubliner cheese.
While the Brussels sprouts roast, gently warm the cream and garlic in a saucepan until the garlic softens. Reduce the heat and stir in the Dijon mustard and cheese until smooth. Do not allow the sauce to boil.
  3. Assemble the Dish. You'll need: roasted Brussels sprouts, prepared Dijon-Dubliner cheese sauce, and the remaining 1 oz grated Dubliner cheese.
Transfer the roasted Brussels sprouts to a broiler-safe baking dish, keeping the browned sides facing up where practical. Spoon the cheese sauce over the sprouts, leaving some roasted edges exposed. Sprinkle the remaining cheese evenly over the top.
  4. Broil and Serve. Place the baking dish under the broiler for approximately 1–3 minutes, watching continuously, until the cheese melts and begins to brown. Serve promptly.

Why Dubliner Cheese and Dijon Work So Well Together

Dubliner cheese has a slightly sharp, nutty flavor that pairs beautifully with the tanginess of Dijon mustard. Together, they give the cream sauce plenty of flavor without overpowering the Brussels sprouts.

Roasting the Brussels sprouts first brings out their natural sweetness and gives them browned edges. A quick finish under the broiler melts the extra cheese on top, creating a golden finish while keeping some of those roasted edges exposed.

What to Serve with Creamy Dijon Brussels Sprouts

These cheesy Brussels sprouts make a rich, flavorful side dish for roasted chicken, pork chops, or steak. The creamy Dijon sauce pairs especially well with simply seasoned meats, so you don’t need an elaborate main dish to make the meal feel complete.
